Well I made my first loaf of banana bread yesterday. And if I do say so myself it came out extremely well. This came about cause I have a banana every morning with my oat mill for breakfast. Well this week the world conspired against me and I wasn't able to have a normal morning all week. So I was sitting here with some over ripe for my taste bananas and not wanting to toss them out. I googled a recipe and well dang if I couldn't bake. The only trouble with it was my nephews and neice came over and well all I got was one slice of it. But oh my was that slice good. ;D ;D ;D

Sorry about that Ozark here it is
2 Cups flour
1 Teaspoon baking soda
1/4 Teaspoon salt
3/4 brown sugar
1/2 cup butter
2 Eggs beaten
2 1/3 Cups mashed overripe bananas
Combine flour, baking soda and salt. Cream together the butter and brown sugar. Then stir in eggs and mashed bananas until well blended. Add flour mixture stir just enough to just to moisten the flour.
Grease a 5x9 loaf pan and pour in dough.
Preheat oven to 350 degrees and bake for 60 to 65 minutes.
I think next time I'm gonna add some walnuts

Well Annie if you ever find yourself in my neck of the woods I'll bake one up just for you. Heck if I'm ever in your neck of the woods and I can borrow a bowl a pan and your oven I'd be more than happy to mix one up. Just so we can sit and watch a sun set and enjoy a slice and some conversation together as friends what could be better than that in this world.

PS--add pecans bits to that banana bread---wrap it and let it sit a day---ohhhhh yeah.

QGM - did you know you can throw those ripe nanners in the freezer so you can bake with them later? Skin and all - just freeze 'em and when you're ready, they're almost "pre-mashed!" (Looks kind of gross, but it tastes just fine in bread!) ;D
