I make sprouted flours out of soaked and dried grains.

I would like to do this in the future, but I haven't found an affordable source for grain yet.

I do make Sue Gregg's blender pancake recipe sometimes, which is a soaked grain recipe using oats and brown rice or other grains.

Flourgirl, what do you use to grind your flour? When making flour from sprouted grains, are some grain mills better than others?

I haven't ever used ALL sprouted grain for my bread, just a portion. I use Karen's chia seed gel trick when I make my bread, so when I use sprouted seeds, I use the chia seed gel as liquid to help blend my sprouted grains in a food processor.

I make my chia seed gel by mixing a tablespoon of chia seeds into a cup of water. Stir periodically until it's a gooey mess with the seeds suspended in the gel. Of course, this also requires that you account for that cup of water in your normal recipe if you do this.

I use a Nutrimill to grind the sprouted grains as they don't work well in the stone grinder.

what does NT stand for besides New Testament?
I sprout my grains all the time. when I bake bread I have sprouted grain on hand, this I put in the blender with water and blend to make a slurry, fine or coarse, depending what I am making and how I feel. this slurry is a base for either bread or pancakes. I found that company likes the coarser pancakes better than fine.
do you have on of these tiered three level sprouters?

I believe that NT would stand for Nourishing Traditions which is a book by Sally Fallon. She promotes using sprouted/soaked grains in breads. For more info on sprouted flours go to www.organicwheatproducts.com

Yes that is right, Nourishing Traditions. Sorry for my delay.. We just moved from Oregon to Nebraska and I've been off for a while.

To grind my flour I have a grain mill attachment to my champion juicer and I do like that. I also have a vita mix and that works well also. It is a little course for bread but if your looking for fast its great.
