View Full Version : Freezing or refridgerating yeast dough?

Hey all. I always see that in the frozen and refrigerated sections of grocery stores, they have yeast -made producs for sale. For example, stuff like cinnamon rolls, pizza dough and dinner rolls. Also, bread. Sooo I'm wondering, can that be done at home?
For example, on a day I am off from work, could I spend the day making cinnamon rolls, pizza dough or bread dough, and then freeeze it unbaked?
If I can, at what point would I do so? Before the first rise? After the first, before the second? Then how would I proceed after thawing the dough?
I'm really most interested in freezing, but even making and refrigerating pizza dough for a busy night would be a help.
Any info on this would be much appreciated!

There's an excellent book out there on the subject: Artisan Bread in Five Minutes a Day (http://www.amazon.com/Artisan-Bread-Five-Minutes-Revolutionizes/dp/0312362919/ref=sr_1_1?ie=UTF8&s=books&qid=1235225056&sr=1-1). Shamrock recommended it to me - an excellent book about making up batches of dough and refrigerating/freezing the dough to make bread products as needed. Lots of variety - breads, enriched doughs (doughnuts, etc.).

hey there i worked in a commercial and retail bakery just outside of new orleans.. made those amazing king cakes yes...
you can freeze yeast dough as long as you dont let it rise right after mixing and kneading freeze asap then let thaw ,, with damp towel in what ever pan you have available.. in the oven with pan of boiling water sitting next to or under it.. do not turn oven on.. practice a few times you can do this or put in microwave with cup of boiling water with damp towel

I've made pizza doughs and froze them. I formed them into pies after the first rise and punch down. I slid them into ziplock baggies (they were small - 10 inches in diameter or so), and stacked them on a freezer shelf. They came out very nice.

I want to make sure I understand. You CAN freeze bread dough....but freeze it before you let it rise? The yeast will survive the freezing process? So we then let it rise before we bake? What we want to do is make up little mini-loaves and throw in the freezer. Then pull them out and bake them for HOT bread with meals.
Just curious....what happens if you freeze it AFTER it rises?

I just wanted to let you know I store my yeast in my freezer. I buy it in bulk, usually a 3 lb brick for about $4.00. That was the price the last time I purchased it about 3 years ago. Stored in an airtight container in the freezer and it has lasted indefinitely for me.
