I like this recipe because it's easy to make and doesn't call for any special ingredients, besides the honey!
1 cup warm water
2 1/2 cups whole wheat flour
1 teaspoon salt
1/8 cup honey (if you want it sweeter, use 1/4 cup)
1/4 cup oil (use 1/3 cup if using an egg)
1 egg (optional)
1 3/4 teaspoons active dry yeast
I knead this in my bread machine, but you can knead by hand. I've tried kneading it by hand, but I end up having to add extra flour which makes it so dry and heavy especially the next day (if it lasts that long)
Roll into balls and let rise until double in size. Bake at 350 degrees for 30 minutes. I make these in my toaster oven and it makes 6 rolls.
if making by hand:
Combine water, oil, and honey. Add 1 cup flour, yeast, salt. Mix thoroughly. Add the remaining flour and knead until smooth and elastic (about 10 min). Let rise until double. Shape into loaves or rolls and place in greased pans, and let rise again. Bake at 350 for 30 minutes. Makes 1 1/2 pound loaf.
It turns out so nice and fluffy and light!
