to keep seeds or course salt on top of buns? I have tried everything and they never stick. I know that they do, I have scraped poppy seeds off of buns,but mine just roll off. I like to use a lot of seeds as I bake a lot of crusty buns. I use caraway seeds, poppy, coarsely ground coriander, and pretzel salt.

Try spraying the buns first with Pam before applying the seeds and see if that helps.

Another product that works well is Quick Shine. It's an egg wash substitute and available from King Arthur Flour - http://www.kingarthurflour.com/shop/detail.jsp?id=1479

It's expensive, but impressive stuff. If you ever enter breads in the fair, this is the stuff to make those beautiful breads shine and the seeds stick. That's my Blue Ribbon tip for the day... ;D

spraying with Pam does not do it, tried that, I also tried spraying with water,
you are right Shamrock, at almost twelve bucks plus shipping that is not cheap. I take it you do not use it on a regular basis.

The can of Quick Shine is 16-oz., which is much larger than Pam (5 or 6-oz.?), and will last years - even with regular use. *So when you compare the numbers, it's actually not all that bad, especially since it does the job. * ;) *It's worth it if you use a lot of toppings on rolls and breads and are tired of finding them somewhere besides the top of the bread. People don't hesitate using an egg wash and NEVER consider the price of that! *

We're ALL worth a little splurge once in a while. Even tightwads like me (LOL). * Ask for it for Christmas or your birthday if you need to justify the purchase. * :D *I hesitated purchasing it for three years because of the price, even though I'd read rave reviews about the stuff.
