Learning how to homestead

I'd like to learn what goes into running a homestead, as well as skills like how to take care of dairy goats, butcher chickens, can food, make cheese, ect... I can trade hard work on the weekends for what it's worth, and can do some mechanical and metal repairs. I'v had a little experience taking care of donkeys and tending a garden, but that's about it.

Unfortunately I'll be tied to the SC area for a while. Even so, any takers?
