Took this 8 point this morning at English Bay, Toleda Bend, Texas. He's quartered and on ice - I need a drink.

Today was the 1st day of buck season up here. DH went out and shot us a buck. He's driving home with it. Guess what I'm working on tomorrow ;D

What are you going to make with yours? You mentioned its on ice. Freezing it all? Canning? I heard that canning venison (in a pressure cooker) makes it real tender.

I quarter the deer and ice em down in a cooler for 2-3 days which dissapates heat rapidly and they seem to be de-blooded better which makes for better packaging and improves flavor. I took a spike opening day and put him through the grinder for burger, all in nice little 1 lb freezer baggies. Sweetie says she wants this one chunked for stews and such.

I'm back home now so it's time for archery and see if I can do something about filling my Oklahoma tag limit of 4. Just never seems to be enough time for the great things of life.

Rick Congradulation there ! gun season started mon no luck yet but have till sunday and still have a couple of days I can hunt and black powder is in after Christmas! ;)

Yeah, OK has one of those short rifle seasons too, two weekends so I picked up a lifetime tag for Texas just before I retired which has two months rifle. I still do archery here in OK which runs from 1 Oct to 15 Jan but gun season is crazy what with everyone in a rush to "make meat" things can get scary. Sure makes for alot of work for me processing all the meat but there isn't much choice as processors here charge $100 for their services.

Here in MN the deer season is in full swing. The deer are really thick up here, just the other day I saw four deer running in the field that is on the north side of our house. Up here the deer is really good eating, all are corn fed, they were just thick in our corn fields all summer.

Hi ya Booker,

Took the first spike with my dad's old model 99 Savage in 250/3000 and the 8 point with my Rem 7mm mag. Most of my archery is done with a Golden Eagle compound @ 52#. Gun season here will end 3 Dec along with duck/goose so I figure it'll be safe to go back into the woods by then.

That is a nice buck, congrats....

We have a LOT of deer around here and you can harvest pretty much all you want (if your a land owner) so goverment beef is about all we eat. I rarely put more than two a year in my freezer as two will last us pretty good. I do buy pork too, as we really like pork...

I harvested this 7 point the other day and it was a big bodied deer and made some nice steaks.

I've always cut up my own game animials too, even when i took one or two moose every year. Around here you can get a deer cut and wrapped for $50.00 and as i get older, that's starting to look better and better.

Congratulations to you, too, DM. Looks nice. I'm with you guys, hubby and i cut up our own. MIL helps too. For one thing you know you're getting your own meat back, plus you can take your time and get all the grizzle out.

Congrats to you both again, those are nice lookin deer and some good shootin on your part. Thanks for the pictures.

I've never weighed a deer in my life, it's always just been about getting food.... We harvest them, cut them up and in the freezer they go. When i was a kid, mom would can some too...

We have lots of deer here and i just say one is big or small by compareing it to the hundreds of deer i see around here through the year...

Good eats!

Round here, the men-folk hunt, clean, and drop the meat off in the kitchen with the women. I've frozen most of it, made seasoned burgers, meatloafs, steaks. Even canned a bunch. We want to try making some stews with the canned meat and some canned and dehydrated veggies (dry run for emergency situations)

Muzzle loader season is in a few weeks.... time to get more canning jars ;D
