We have a steer ready to butcher. Hes around 1100 pounds. What is the best temperature to butcher him in? Its in the upper 60's here during the day and lower 60's at night. After the steer is dressed, how long should he hang before the meat is cut up?

Although you can do this yourself you will need "Big" equipment, space, and cold storage to handle something this big !
Most people send the big stuff to a slaughter house, then pick up "Boxes" ready for the freezer.
I personally do not butcher anything larger then 300 to 400 pounds. I do all our Fowl and small livestock. A full grown Goat can be a hand full for someone new to butchering.
I prefer to butcher when the day time temps are in the high 40's to low 50's but low 60's will work.

its best to dress them when its cooler , but we did ours this past sunday and it was around 60 here in rhode island he went right into the cooler, We leave ours hang from two to three weeks
