How big is this canoe?
Thats a lot of gear, and canoes flip and stuff sinks.

sorry i forgot to mention that it will have outriggers on each side of the canoe
so tipping wont be an option.

Which end are you starting from ?
Two things are didn't see, A hand-held marine vhf radio and most important tide tables for the areas you'll be going through.
There are parts of the inside that you have to work the tides or you will go backwards.
I have over 70 round trips through Alaskan and B.C. waters. Never in a canoe.

It appears that many items on the list are heavier than perhaps is wise. Cast iron pots? Canvas tent? Wood stove for tent?
I would be more likely to use light weight backpacking gear that I use for bicycle camping. Aluminum or titanium pots, small self contained stove, small nylon tent, etc.
One biggy you left out is a water filter. I have a Katadyn Vario Microfilter that screws directly to a MSR Dromedary 6 liter bag.
I wouldn't count on being able to make an open fire with available wood. Many areas have been very dry and open fires are verboten.

If you are planning hikes away from your canoe, you should have a firearm capable of dealing with brown bears or wolves. Most of the islands have one or the other; the mainland would have both in most places.

Sorry, but:
Everything is always an option. One word,
"Titanic"
To believe otherwise is not wise.
I agree about the cast iron gear too heavy.

A good firearm is a good idea. You'd be cool while in Alaska, but the Canadians have a problem with American packing around weapons in their country.
You can hunt in Canada, after buying overpriced hunting licenses and pay for a licensed hunting guide to supervise you.
Check the laws be for your trip....
