I recently got my pig back from the butchers. Everything was good except the ham was a little greyish and white in color and just was not that good. I am not sure if It was the smoking or what but I dont want to repeat the mistake. I raised it on commercial food. I have had the same butcher do a couple of other pigs butchered by the same guy and had good results.

Sounds like your ham wasn't properly cured, it should be pinkish throughout.

Is it ok to eat? just not that great tasting. Might do the next one myself

Who generally cures the ham? The butcher or smoke house
