anybody here like ratatouille?

I am making some today, my neighbor gave me an eggplant

Hey muh friend, how are ya? I would be the only one in this house that would like ratatouille. Can ya post a recipe for it? I can eat mixed fresh veggies all day long and be a happy lil camper.

well, I sort of play it by ear.
about three colorful peppers,
1 zucchini
1 onion
1 eggplant
couple of tomatoes
(of course I like more onion)
Salt and pepper, twig of thyme, garlic, bit of oregano, very little rosemary or none at all,
Olive oil and a shot of wine

cut into bite size pieces, if you want it to look pretty fry each variety seperate in the olive oil, take it out, put in another pot, do the next and so on, add spices and dash of wine if you like it, cook how you like it, al dente or mushy or in between. we like goat meat and it goes well with it, some homemade flat bread, open a new bottle of wine...

I like to stir fry eggplant, zucchini, onions, mushrooms, snow peas, tomatoes and add some cooked chicken to it, then top with sunflower seeds.

How do you cook your goat meat?

I love ratatouille but I can't eat it anymore, full of nightshade vegetables.

I love roasted or grilled Ratatouille.

I've never made it exactly the same way twice.

It's one of those..."How do I use-up all this overflowing summer garden produce?".... kinda recipes.

Eggplant, of course. :)
Summer Squash, whatever kind you may have.
Bell Peppers, green and/or red.
Onions.
Garlic.
Tomatoes.
Fresh Rosemary.
Fresh thyme.
Olive Oil.
Salt and pepper.

It's great with a bit of grated Parmesan! MMMMmmmmmm!!!!!! :D
