View Full Version : over ripe cucumbers

Time got away from me and some of my cucumbers are big and turning yellow. Can I still use them, maybe for making relish or should I toss them to the compost pile?

Yellow cucumbers look bad but they are okay. Make relish with them. There are some specific recipes around for just them if you do a Google search.

Slice them thin & dry them. This winter add the dryed cucumbers to sour cream or ranch dressing for a dip.Is a yummy taste of summer in the middle of winter.

I've used large oversized slightly yellow cucumbers to make cinnamon pickles. These are tasty and resemble watermelon rind pickles.

I would lie them in the sun on a table to dry out the rest of the way, then save the seeds. Once they get too mushy, they are still good for chicken feed or seed saving.

sorry-- lay them not lie them! I do know English, but it doesn't always show in my spelling. LOL

If the seeds are really big I would quarter the cucumber longways and use a spoon to scoop out the fiberous seedy portion, then peel it. You should be able to still use it. Taste a little piece and see if it turned bitter.

I did this with some of my cukes this year to try. Can't wait to try them this winter.

Thank you for all the ideas. I will have to try the cinnamon recipe, never had pickled watermelon. Drying cucumbers slices sound good but I do not have a food dehydrator and being in Northern IL it gets a little humid at times to dry things in the sun. Would setting the oven on a low setting work?
I will have to get to work on making relish.

I like big cucumbers. You can saute them for a side dish, peel, quarter lenghtwise and scoop out seeds. then cutinto chunks. fry a couple strips of bacon, add cucumbers, sautee until a little glassy. add salt, pepper, dust with flour and cook a little more, add a shot of vinegar if you like.
for salad I put the big julienne blade in the mandolin and cut them in strips and add dressing.
