I have a opened can of baking powder with the expiration date o8. Is there a way to test it to see if it is still good without baking with it?
Thanks

Baking powder reacts to both acid and heat, so you could half way check by adding a little to some vinegar and seeing if it foams. But it really depends on what it is made of. a homemade baking powder can be made from 2 parts baking soda and 1 part cream of tartar. but it will not be a "double acting" baking powder like what you find in the stores.

Using it in a recipe is the only surefire way to tell if it's still any good.
Make a small batch of pancakes to test it out.
If you don't want to sacrifice the ingredients, toss it and buy new.
Argo is the all-around best (IMHO), and it's aluminum-free!

Assuming this is baking POWDER and not baking soda, just add a little bit of it to some water and see if it fizzes.

Agree.

To test baking powder's effectiveness: mix 1 teaspoon (5 grams) baking powder with 1/2 cup (120 ml) hot water and the mixture should bubble immediately. Store in a cool dry place and it should be replaced every 6-12 months. http://www.joyofbaking.com/bakingsoda.html
Lots of good info on both powder and soda at that link.
