that I want to freeze or can. Do I need to roast them and peel them first or can I just can/freeze with the skin on and the seeds inside.

Tex,

I noticed you didn't get any responses. I tried to look for something on the internet but didn't have much luck.

Are the Poblano peppers the same as chili peppers?

Why can't you just string them up and let them dry?

I like them a lot, and would treat them just like you would bell peppers. I cut my bell peppers into squares and freeze them with the skin on, but you can skin them and freeze them too.

Thanks guys. Paul, in my part of Texas the humidity is too high to dry much - they would mildew and mold and I have a thing about green chili stew so I want the chilies green.

Hi Tex - I love poblanos! I grow lots of peppers (anaheims etc). I usually roast and peel before I freeze or can. As DM said you could dice and freeze without the roasting. I haven't done chile peppers like that but have done sweet peppers in that way.
Bet those will make a great green chile stew (which you could also can). I usually do a pork green chile double batch - one for dinner one for canning.
