View Full Version : Apple Cider Jelly

I have a gallon of commercial apple cider in the refrigerator to use to make some jelly. However, I'm having a hard time finding a recipe that either follows current recommendations or that is known to work.

Most recipes that I've found mention sealing with wax. The feed back on the one did find for water bath, was that it wouldn't jel.

Anyone have a tried and true recipe? I've got to either drink it or make jelly soon.

eatdrinkbetter.com has a water bath recipe that calls for 6 1/2 c sugar to 3 3/4 c cider and 2 pouchs of liquid pectin. There was no feedback on it and I am NO judge on jelly recipes! lol But it did seem to read like my other recipes.... hope this helps.

Recipes for fruits or juices are pretty standard so you can follow any recipe from the insert in a pectin box. If you don't like all the sugar then use a no sugar required pectin, otherwise use the regular dry or liquid pectin. Just remember that the recipes and instructions and slightly different for different types of pectin.

For the no sugar required pectin for example it is 4 cups (32 ounces) of juice, the amount of sweetener you want, the pectin, and then following the Water Bath canning instructions.

CanNerd, thanks for your reply, as well. Appreciate your advice on the no-sugar aspect. Hope I can still find the no sugar pectin around here. Have a couple boxes of the regular version. So, I'll probably have to end up using that.

For some reason I'm not a big jelly eater. Can't say the same for the rest of the folks in this househould. :) So, I haven't made a lot of jelly over the years. And, most of what I've tried to make has turned into some great tasting syrup for pancakes.

Bought that gallon of cider to get the glass jug. :wink: Wish me luck in making jelly from the contents. Again, thanks for your replies.

Yes, but not for jelly.

Had company coming and decided to do a hot cider pot with the crockpot and some spices in a tea ball.

Gotta get some more cider and get it in the jars before anymore company comes by. :)
