View Full Version : Chicken Fettucine Florentine

I have to share this. It is just too simple.
Last night I had planned on making chicken fettucine alfredo. I cut the chicken breasts into strips and cooked it, then I added some garlic and a jar of store-bought alfredo sauce and started the water for the noodles. Then I looked in the cupboard for some easy veggies to go with and I spotted it... A can of spinach that has been sitting there since I had chicken florentine in a restaurant and figured that it would be easy to make at home. I opened and drained the spinach and dumped it into the chicken alfredo sauce and mixed it and let it simmer while the noodles cooked. Then, as tradition in our house with pasta, I mixed the sauce and noodles together and served. OMG! I don't know if there is a word to describe the taste. Is foodgasm a word? The kids stuffed themselves and said they have never tasted anything so good before, ever. Being the cruel dad that I am, I immediately told them that it was spinach. They just kept on eating anyway!

That sounds so goood, I am going to try it. Its our "custom" to mix the pasta in the sauce here too. Its just easier.
Thats the running joke around here with the kids, whenever we are eating something we really enjoy and they have never had it before, we always tell them, "oh I don't think you like this, you probobly don't want any of it" I started it cause I didn't want to share (I'm a mean mom) now its just an open invitation for them to horn in on my tasty food!

You would be amazed how good a splash of white wine in this would be...
also in your red pasta sauces.. omg...
An if nobody is look'n you can drop a minner in there too :D (anchovie).

Canned alfredo sauce - yuck - alfredo is the easiest thing in the world to make
1 stick butter
1 tablespoon chopped garlic -
cook on very low heat till garlic is soft - you DO NOT want the butter to brown.
Add 1 cup heavy cream or even half & half - simmer - DO NOT LET IT COME TO BOIL - simmer till really hot
pour over drained pasta with 1 cup grated parm. cheese - NOT THE STUFF IN THE GREEN CAN. Stir
Mind you - the sauce will not be thick when it comes off the heat.
You will think you have reallly messed up but the sauce and cheese will thicken as it cools - just keep stirring the noodle,sauce, cheese mixture ever minute or so.
Add salt and pepper to taste, etc.
If you want veggies in it or meat - add them while you are simmering the cream mixture - I like left over chicken or spinach or broccoli - even English peas are great.
BTW - left overs are better than the first day - not sure why but it is.

That sounds tasty, as for being better the 2nd day some stuff just is. Spaghetti and Chilli I think are also better the 2nd day, and so is potato salad.

I know only two things about "making chicken fettucine alfredo":
1. My son can make it and it is to die for! Yum! (He calls it "Heart Attack on a Plate!")
2. I bought some frozen in a plastic bag, and feel lucky that I didn't die of it.

Yes, yes. And even better over good homemade fettucinne - I make mine with my Kitchenaid pasta rollers.

Prairie, I have a pasta machine that looks just like that - don't know if it is the same brand or not.
I also make home made noodles and although we like them quite wide I roll the dough in the pasta machine and then cut by hand. Saves lots of time and elbow grease not having to use a rolling pin

We used to roll and cut noodles by hand to make kielke, but it is quite labour intensive (ever see the shoulders on a Mennonite lady? :D ) thats why we got the noodle maker. It was quite pricey, but you pay once for quality.
