Ingredients

* 3 cups shredded cooked turkey
* 8 cups vegetable broth
* 2 (28 ounce) cans whole peeled tomatoes
* 2 (4 ounce) cans chopped green chile peppers
* 4 roma (plum) tomatoes, chopped
* 2 onion, chopped
* 4 cloves garlic, crushed
* 2 tablespoons lime juice
* 1 teaspoon cayenne pepper
* 1 teaspoon ground cumin
* salt and pepper to taste
* 2 avocado - peeled, pitted and diced
* 1 teaspoon dried cilantro
* 2 cups shredded Monterey Jack cheese

Directions

1. In a large pot over medium heat, combine turkey, broth, canned tomatoes, green chiles, fresh tomatoes, onion, garlic, and lime juice. Season with cayenne, cumin, salt, and pepper. Bring to a boil, then reduce heat, and simmer 15 to 20 minutes.
2. Stir in avocado and cilantro, and simmer 15 to 20 minutes, until slightly thickened. Spoon into serving bowls, and top with shredded cheese.

This recipe made enough for an appetizer before last nights dinner, and 1 1/2 quarts for dinner tonight, plus 2 quarts and 6 pints that I canned yesterday as well. It is delicious!!

That sounds good. I'm gonna have to try it. I'm gonna have to wait til after Christmas to have some cooked turkey though.

You will appreciate it up there too, it has just the right amount of heat, and warms you from the inside too...:wink:

Forgot to add, I substituted 4, 14.5 oz cans of diced tomatoes with jalapenos for the 2, 28 oz. whole tomatoes.

I make a similar soup with chicken-- I usually use stock made from grilled chicken to give it a smoky flavor. And I end up with a little bit of Sweet Baby Ray BBQ sauce. I know--that's not homemade but I haven't figured out how to duplicate it yet. I think its the tamarind--it just has this flavor that makes things taste good.
I'm sure it would work with turkey as well.:)

I processed the quarts for 90 minutes, since I had both quarts and pints in the canner, the pints got 90 minutes as well.

Allison,

If you can something with several ingredients, you always can according to the ingredient that requires the longest canning recommendation, which is usually the meat.
