Has anyone canned orange juice? It's fairly acidic, so I would image it could be done in a water bath canner.

The citrus is ripe in Florida!

When I tried to can orange juice and orange segments, it came out really bitter -- not tasty at all. :shout:Bleh! Not sure what I did wrong. Wishing you much better luck with your oranges!

Allison, is this the method that you used?

Pam, you may want to try canning just a couple of pints of pure, fresh orange juice. Then, wait about a week. Refrigerate, then try it. Suspect there's a reason why orange juice, by itself isn't listed with the National Center for Food Preservation or in the current Blue Book. If you like fresh orange juice, I suspect there's a big flavor change. Could be wrong, as I haven't tried to can it.

BTW, Jackie is using the BB procedure for canning grapefruit juice. Although the time for that is 15 minutes, instead of 20.

If you are canning orange juice make sure you use a "juice type" orange. Navel oranges can be juiced but the juice will turn very bitter if it is not used promptly. valencias are one juice type I can think of off hand.
