I plan on making some then vacuum packing it to make it keep longer. Should I freeze it too? Any suggestions?

Storing the Jerky
Properly dried jerky will keep at room temperature two weeks in a sealed container. For best results, to increase shelf life and maintain best flavor and quality, refrigerate or freeze jerky.

If I were making it,I would not use hamburger....too fatty,it will make jerky,but will take longer to dry and will not keep as well....instead use ground sirloin....you want 10% or less fat to ground meat....just my two cents.....

Anyone have a recipe for hamburger summer sausage ?
Seasoned meat, wrapped in tin foil, baked and turned, baked and turned.
I had it years ago and lost it.
