I planted one beet seed in each hole but I have 2 plants(2 stems with 2 leaves on each of them) in each hole. Is this how beets grow or should I remove one plant (stem and 2 leaves)?

I would leave them be, mine looked the same last year and we had a terrific harvest of beets, of course they were so good Lynn was eating them as fast as I picked them, so very few to can, I planted twice as much this year.

This is my first year for them. I don't plan on canning any. Don't know how to can yet:). But thought fresh beets would taste great. I planted quite a few. I just came in from planting a few more rows. Planted some more lettuce and scallions too.

I will eat them, but I grow them more for her, she LOVES them and can hardly wait to dig in each year. Canning is my department, that is why I planted twice as much, so that I can actually get some put up, maybe she will not have to go without this winter and will be a little less aggressive on next years crop...

Personally,

Beets are one of the few foods I do not like. However, I usually plant a few somewhere out of the way for a buddy that helps me out a lot when I need it. Otherwise, you wouldn't find them here. lol I also told him I wouldn't can them for him. He can do that. So, he digs 'em, takes them home and cans them himself. I think he pickles some, too.

Daff,

My beets have always sprouted with two leaves, kinda purple looking. I think it's normal. We eat a lot of beets, so we plant a lot. So far mine are slow to come up, but we've had unusually cool weather for this time of year.

If you're interested...

... we just boil them whole then peel, quarter and saute in butter with salt and pepper. For easy pickled beets boil beets til soft and peel and quarter or slice, simmer equal amounts of sugar and vinegar till sugar has disolved then pour over beets, cool and put in the fridge. In a few hours they'll be pickled. It's foolproof. I've used all kinds of vinegar too and they always taste good.

beet seeds are actually clusters of seeds. You can puit a few in 1 hand then clasp hands together and rub. This action will break up the clusters, harder to plant and no need really. i never thin beets(cylindra types) and always have super nice beets. Smaller ones will grow as the largest are harvested.

take a seed and look at it, one seed can consist of more than one seed, similar to spinach. I have had some come up in triplicate. No big deal.
