View Full Version : Million Meal Meat Sauce

Apparently PCCrowder had asked for this recipe and I did not follow the thread very well and neglected to check my pm's. Sorry for the delay and here it is.

Okay here is goes. I guess I can post it too since I really feel bad not seeing PCrowders request for the recipe either. This is not my original recipe it is called simply Seasoned Ground Beef I call it Million Meal Meat Sauce because of everything we do with it.

4 pounds lean ground beef
1/5 cups chopped onion
2 cloves garlic minced
2 cups tomato juice (I have used sauce in this also and it works fine)
1.5 cups beef broth
1 tsp salt
1/2 tsp pepper

Brown meat, drain off excess fat. Add onion and garlic and cook slowly until onions are tender. Add remaining ingredients and simmer 15 min. or until hot throughout. Skim off excess fat in necessary. Pack hot meat and sauce into hot jars leaving 1-inch head space. Process pints 1 hour 15 minutes and quarts 1 hour 30 min. at 10 pounds of pressure.

It makes about 5 pints or 2 quarts but I usually double it to make it worth it.

This sauce is the base for a lot of other meals. I use it to start sloppy joes, just add additional seasonings for that and I usually add a tomato paste to thinken, a little spicy ground mustard for that zing in sloppy joes and some green peppers.

It makes a really great soup starter too. Just thin out with more beef broth and sometimes I add more diced tomatoes to make "hamburger soup" with diced potatoes, ,mixed veggies (what ever happens to be on hand). The guys love that one. And of course it can be used to make spagetti sauce when the rush is on. You can add spagetti seasonings and thinken or thin depending on how you like your sauce. And of course it tastes great poured over home canned potatoes. Talk about fast food it is more convenient and I don't have to drive to go get it, just walk to the pantry :) Can't ask for more than that.

I wonder how well this would convert over to a pork or Italian sausage sauce.

cwatson - don't worry about it! I know you're busy, and i certainly didn't expect an instantaneous answer! I'm dealing with a backed up septic tank all over my family room floor, so I haven't had much of a chance to do anything, and I sure won't have the time to can much until at least the weekend.

Your sauce sounds YUMMY! Can't wait to make some!

I've thought about your recipe off and on today, (have to go to the grocery to get the HB and beef brooth), You know I can almost taste it, heated through, with either cheddar cheese, velveta, or even sour cream, then mix it all with some noodles.ewweee, that sounds so good! Something I forgot to ask, is when you make a double batch, do you can your excess (please, if you can it, for how long, and @ how many pounds), or do you freeze it. Am sure DH will love MMMS, I do, and haven't even made it yet!:)

Thanks for sharing this recipe! It sounds great. I can lots of convenience foods when I am feeling good so that DH can use them to make supper on the days that I am not able to cook. This is just the kind of thing we like to have on hand. Blessings, firegirl

Yep I can it. Makes it so DH can actually "make" a meal :)

Process pints 1 hour 15 minutes and quarts 1 hour 30 min. at 10 pounds of pressure.

BTW PCrowder, I am sorry to hear about the septic problems.
