I’m guessing not many if any. There is no accreditation to meet, there is no health regulations to meet as long as you’re not selling any of the food you are canning. Here in New Mexico it seems everybody and his dog are giving classes of one kind or another – you name it and they are offering classes. They are often done through community centers or senior centers and they are not shy in the rates they charge. If they are “supplying” the materials in the cost, they are really not shy in the cost. Now the centers may be cautious about who they let hold classes, but those that do them on their own don’t seem to meet any criterion – I guess it is up to the student to determine if the person has any type of experience or credentials to qualify them as a viable instructor. Most of the better courses have one thing in common; preparation. Well thought out course outline and plan of instruction. Thoroughly prepared hand outs and class materials. They seem to present themselves as knowledgeable and experienced and willing to share their skills and knowledge with others – for a price, but they are selling expertise and their time don’t forget.

Here in WA my wife has been teaching home canning for years. Mostly to young mothers who work with her. She never considered to do it for money.

Be aware of the increased liability exposure if you choose to do this at your home. Additional traffic on your property and in and out your home may increase the chances of an individual being "injured" in some way. (Its clear I work in insurance) Just heard of a lady trying to get money out of someone for medical bills after walking into the sliding glass door. Maybe it was just her pride that was injured but none the less she successfully recovered $500 for her "injuries".
