Please bear with me... Several years ago, I read an article in either Backwoods Home or Countryside magazine. It was submitted by an elderly man whose Italian mother would preserve part of their tomato harvest by making thick tomato paste and then drying it on boards outdoors in the sun until it formed a very thick paste, which they would then roll into small balls and preserve. Does this sound familiar to anyone?
I would really like to locate this article if possible. I can't remember all the details, and it's a method I would like to try myself. I am thinking the tomato past balls were preserved in a crock of olive oil?
Unfortunately, I lost all my back issues of my homesteading magazines to a house fire back in 2001, so I can't go look it up.
