Anyone use garlic scapes? Have any recipes / preserving methods to share for them?
We bought some from a friend at the farmer's market and have been using them all week in garlic smashed pototoes, and sauteed in butter with sea salt, cracked pepper and a splash of strong coffee and then served as a sauce for steak, chops and chicken. The friend makes pesto from them, but there is bound to be more ways to use them and put them up for winter that I am not aware of.
We love garlic and the flavor of these is like a really fresh tasting, green garlic.

You could use them in omelets, haven't tried it, but don't know why you couldn't chop them up, and use them to make a loaf of garlic bread. Maybe, chop them up, spread them on a cookie sheet, quick freeze, then put in zip loc bag, and pop them back into the freezer, for future use. Or even as previously mentioned with herbs and such, chop them, put in ice cube tray, with water. After frozen, pop them in a zip loc bag, to be added later to a stew, or sauce you are making. Hope this helps a bit.

I could picture them nicely chopped at a slight angle and sprinkled over a soup or pilaf recipe or a salad. Like green onions or chives. I'm betting it would taste as good as it would look. :)

Thinking I might also try chopping some up and dehydrating them for winter time usage.

DH is stuck on an old recipe from his childhood that his grandma made called "frankfurter salad" (boiled cubed pototoes, diced onions, diced cucumbers (from the garden! :yes4:) and diced cooked hotdogs combined with mayo, celery salt, and black pepper. Tonight I added a handful of minced scapes and he approved.
