Hubby brought home the first batch of wild mushrooms last night. We call them "deerhorns" -- I am sure there is a scientific name out there. Doesn't matter to us- we clean em, drop them in beaten egg, then roll in seasoned flour and fry in butter. Yummy! Almost as good as the early spring red mushrooms and morels, almost. Should be a good year for them, we have had plenty of rain. Happy hunting, moz

We saw a bunch yesterday too. We don't use the fall ones, just the morrels, so they were left standing.

I will look for chickens, hens and Lions Mane for fall eating, they are all good.

Momma... - the fall mushrooms are good fixed like you would morels. Especially the smaller, fleshy light yellow, light tan and pinkish ones.
nhlivefree...- we have eaten hen in the woods and some of the others, when we find good fresh ones, just don't have as much luck finding them as we do the deerhorns, which we usually find by the bucket full.

Mozarkian, That's great that you have access to the fall varieties...we've somehow gotten mushrooms growing in front of our home, kinda looks nice, only problem is they are not the ones you can eat...and yet,our next door neighbors have some morels growing each spring in their front yard...maybe they'll 'migrate' our way in time, we sure can hope!
