I'm going to make pumpkin butter next week, but read on the internet that it's not recommended to freeze or can it, that you should only freeze the pumpkin puree.
Has anyone made pumpkin butter? Have any words of advice?

Jonvee I have made and canned pumpkin butter several years and we use it and are still living. They dont recommend canning due to density, but it is no more dense than say apple butter. and you do add enough sugar to make it almost jelly like. But then again I dont play by the rules but do use common sense. I will say this, just because of the density I would NOT can it in quarts, I only use pints and half pints for butters. But this is just my method. Hope this helps a lil bit.

I made some today and canned it. Like sbemt456 said people have done it for years. My 86 year old friend laughed when I told her I read you shouldn't can it. Her answer was "I am 86 years old and I canned pumpkin butter more times than I can remember and never got a day sick from it".
I remember my great grandmother canning it all the time too and she lived to be 98. I think I will keep being careful and keep canning my pumpkin butter :)
I canned in the 1/2 pint jars and 4 that are even smaller that I always give to friends as treats.

I made a batch of peach syrup this summer......
Does anyone have a recipe for pumpkin syrup? Or do you think that the same recipe would work for the pumpkin?
I do not have a pressure canner (stupid ceramic stove) just a water bather.

Everyone loves my pumpkin butter. I make it in the half pint sizes as well. Do what you feel comfortable in doing.
I noticed they have changed a lot of recommendations lately including NOT canning chocolate sauce. I often wonder why they do this after SO many years of saying it was OK. Probably someone didn't process the stuff right and they got sick. They then get gun shy and change the whole recommendation.

So how did it turn out? I have never heard of pumkin butter B4. It sounds Yummy though!
