View Full Version : Beer Grain Bread

My DH started brewing his own beer so naturally I started thinking what can I do with all those leftover "spent" grains. Of course bread came to mind first so I asked the owner of the home brewing shop in town if he had any and he sure enough did.

Many of you probably already know this but there might be another newby out there like me so here it is:

Beer Grain Bread
1 tbsp salt
5 cups flour
1 cup 100 degree water
1 tbsp sugar
2 tbsp olive oil
1 tbsp dry yeast
2 cups spent grain, well drained

In a large bowl combine salt and flour. In a small bowl dissolve the sugar in water, add yeast and olive oil and stir well. When foam begins to form, make a well in the flour mixture and pour in yeast mixture. Add grain and stir to form stiff dough. Knead until elastic. Form ball and remove from bowl. Pour 1 teaspoon olive oil into bottom of bowl and return dough, drizzle another teaspoon olive oil on top. Coat the top of the dough with oil. Let rise until doubled, about 2 hours or refrigerate overnight. When dough is doubled, punch down and knead a bit more. Divide into 2 8X4 loaves or 3 - 4 balls for pizza. Loaf pans should be well greased.

For bread, coat loaves with olive oil and allow to rise until double, about an hour or so. Heat oven to 375 degrees, bake 40 minutes. Cool 10 minutes in pan then remove and cool on rack.

For pizza, roll ball out to 1/4 inch, brush with olive oil. Heat oven to 500, put dough on stone and bake until bubbles start to brown. Remove add toppings and bake on pizza pan or stone until done.

I made it last night as a bread and it is really yummy, especially with a little pumpkin butter on it :)

Oh Thank You! My DH brews also and I've always been a little sad when he tosses the spent grains.
Nice homebrew and fresh bread, great combo!

Wow!

Quick question, how dry would you say the leftover grain needs to Be?

Brewing again here in a couple weeks, so I can't wait.

Oh, and what kind of beer was being made? Just curious if some types of grain combos might work better. If I don't forget I will post my results.

Bondo,

The grains weren't actually dry they were just well strained and very moist just not wet. DH brewed an Irish Stout that had a lot of different grains (don't know what all they were but I do know one of them was chocolate something). I really liked the texture of the bread it was wonderful.

Can't wait to read your post of your results. DH's beer batch didn't work but the bread did. He will be trying a new batch this weekend with different grains so I will get to make a new batch of bread :)

Fancy I can't wait until DH has a successful batch so I can try some fresh brew with some fresh bread :)
