Grizzy & I were discussing adding something to the regular Thanksgiving meals. We are looking for recipes to try. Maybe a desert or side dish. We would appreciate any ideas. Please share your favorite dishes with all of us. It could be fun to try some new recipes. I will post later with a recipe.

Pumpkin cheese cake.... I just make cheese cake as usual, add a can of pumpkin with some pumpkin spice. It works better with the canned pumpkin rather than those you cook down because it's thicker and dryer than mine turns out.

Cream corn and oysters. Just add some oysters to some cream corn. Yummy

Dulce de Leche Pecan Pie
aka Crack Cocaine Pecan Pie

There's no cocaine in this pie, one of my coworkers claims I must use it because the pie is so addictive.

There are three ways to make Dulce de Leche; hard, very hard, and easy.

The hard way is, mix a can of sweetened condensed milk with a can of evaporated milk, and cook it down.

The very hard way is, mix half a gallon or a gallon of milk with a cup of sugar and cook it down to a cup of milk jam.

The easy way is, take a can of sweetened condensed milk, DO NOT OPEN IT, remove the label, put it on a couple skewers at the bottom of your crock pot (or it will leave a rust ring. Ask me how I know this...) Cover with a half inch of water, and leave on low overnight. COOL COMPLETELY before opening; pressurized hot liquid caramel is NOT your friend. Yes, it turns into a jello-like blob of milky caramel goodness. Other serving options: a spoon.

OK, that's the day before. Now the pie:

The crust:
In a food processor, mix:
1 pack graham crackers
1/4 C sugar
3/4 stick of butter, melted.
Pulse until combined and reduced to moist crumbs.

Press into 9" pie pan with your fingers, packing firmly. Bake at 350 for 8-10 minutes to set the crust.

The filling:


1 14 oz can Dulce de Leche
1 C brown sugar
2 T butter (the other 1/4 stick from the crust)
1/4 C corn syrup (I used dark because I had it)
3 eggs

~1.5-2 C pecans

Mix together; again the food processor is your friend. Add the pecans in stages; the first handfuls help mix the filling. Save a handful to sprinkle on top, or hand place them if you really feel like it.


Pour filling into the pie pan with the crust.

Bake at 350 for 30-35 minutes until the custard has set.

Raisin Walnut Pie

very very good

1 (15 oz) Pkg. Pillsbury All Ready Pie Crusts (I use the ones all ready made in the aluminum pie pans for one crust pie)

Filling

1 c. raisins
1 c. chopped walnuts
1/4 c. firmly packed brown sugar
2 tsp. grated orange peel
1/4 tsp salt
1 1/2 cups light corn syrup
1 tsp orange extract or vanilla
3 eggs


Prepare pie crust according to directions for filled one crust pie.

Heat oven to 425. In medium bowl, combine all filling ingredients; mix well. Pour into pastry lined pie pan. Bake 425 for 10 minutes.
Reduce heat to 350; bake an addtional 25-35 minutes or until knife inserted 1 inch from edge comes out clean. (Center will be slightly soft) Cover edge of crust with strips of foil after 15-20 minutes of baking to prevent excessive browning.

Cranberry Rice
1 tsp oil
1 onion, chopped
1 1/2 cups chicken broth
1 cup Basmati Rice
1/2 cup orange juice
1/3 cup dried cranberries
1 tsp orange zest
1/4 tsp sage (opt)
salt, pepper

Heat oil, add onion, saute until softened.
Stir in rest of ingredients, bring to a boil. Reduce heat, simmer covered about 15 min.

I take about 1/2 a can of jellied cranberries, mash them up well,
and add a little Cayenne pepper.

A little of this makes a fork full of something bland stand up.
