Thanks for posting this. When you said easy, you weren't kidding. It takes longer to melt the butter than it does to mix everything up.

I make Beverage Bread once in a while. My recipe is:

3 c self-rising flour
1 12 oz beer or 12 oz lemon lime carbonated beverage
1 tbsp white sugar or honey, if using beer.

Quickly mix and pour into a well greased pan. Bake at 350 until toothpick inserted in the center comes out clean. Time will vary by size of pan and can range from about 25 minutes to 60 minutes.

One of my favorite ways to bake this is to do it in a cast iron skillet. Bakes faster and can be cut into wedges or simply tear off a chunk to go with a pot of beans.

Using lemon/lime gives a milder flavored bread to go with foods that work best with biscuits or rolls (chicken stew for example). Beer bread and beans is a good combo, too.

Substitutes: 2 c self rising flour, 1 c whole wheat, 1 1/2 tsp baking powder
sub portion of flour for bran flakes, rolled oats, nuts, raisins, etc. For example: 1/2 c rolled oats.

Optional: Choose one or more.
2 1/2 tsp wheat germ added to flour mixture.
1 tbsp oil added to dough mixture
1/4 c melted butter, on top before baking or 1/2 in dough & 1/2 on top
3 tbsp sugar or honey for beer bread, if you want a sweeter flavor
5 tbsp caraway seeds, chives, poppy seeds, or chopped onions
Sprinkle top with Parmesan cheese, before baking
Add 1 cup grated cheddar or Swiss cheese and 4 shakes of hot pepper sauce
Dilly Bread - add 2 tbsp drill dill weed or 1/4 c fresh dill

Have fun experimenting with this bread.

I use a very similar recipe published in TMEN in 1979........

Esther Shuttleworth's Beer Bread

"This unusual bread is as quick 'n' easy to make as it is tasty. Just mix 2 tablespoons of sugar into 3 cups of self-rising flour, and then add a 12 ounce bottle of beer (stir well while you mix in the brew, and only add about 4 ounces at a time). Pour the batter into three well-greased 3" X 6" pans (use two if you'd like thicker loaves), and "drizzle" 1/2 cup of melted butter over the top. (The butter should form a 1/ 8" -at least-layer over the dough.) Bake this bread for about 50 minutes at 350°F ... and then just try to keep your family from eatin' it all as soon as it comes out of the oven!"
