never heard of Bill Dixon before, but sure is interesting. Now my DH was born and raised in Eastern Ky in the Mountains and his grampa had a smokehouse like that. They smoked onions and apples, too. They kept better. Thought I share the link with you

I remember my dad smoking meat using the same method several times when I was young. Only our smoke house was not log but was framed like a house would be. Another one of those appalachian things I guess.

Land sakes, you could sling a cat through that corncrib of a building that feller's using. If he had a tight smokehouse, he wouldn't need to be hangin any drapes or curtains..

A smokehouse ought to be tight to where you won't get rats or mice in there. No matter how smoked your meat is, rats and mice simply love a gnawing on your meat and I don't hanker to eat anything those pesky rodents have been a crawlin around on.

If you aim to build a smokehouse, build it rodent and cat proof. Build it big enough you can have a salt bench in there like the feller in the video. Then pipe the smoke in so you can cold smoke. I prefer a cement floor so nothin can dig in. Then you can leave your meat hang in the smokehouse as long as you want and won't have to worry about it. Make vents in the roof to let the excess smoke out. You don't need much for ventilation as the idea is to keep the smoke in as much as possible.

I'd consider it a real pain in the neck to have to go a hangin curtains ever time I wanted to smoke somethin. A good smokehouse is set to go at any time and you can smoke just bout anything you can think of. Smoked chickens, turkeys, fish, pork. Man, right now, you can ice fish and get a bunch of worthless carp and smoke em and have some nice smoked carp.

A good smokehouse is a good investment. Build her right the first time.

Hint, if your smokehouse ain't rodent proof, hang your meat with wire and not string, that way the mice can't climb down and gnaw on your meat.

I knew I knew his name. I lived in KY for 10 or 12 years. Bill Dixon is the host of the Kentucky Afield TV show.

At my last house, in the big city, my neighbors were from Bosnia. They had chickens (not legal, but I didn't complain), their entire, small, backyard was a garden, some fruit trees and a smoke house. Theirs was a shed type building with a concrete floor. The built the fire right on the floor when they smoked. The wife would also build a fire there, then set a big wok-like pan on the coals and bake bread in it. Mmmm, she made great Turkish coffee...
