View Full Version : Coconut banana macaroons

Goofing in the kitchen. So I plan on using up 1 1/2 young drinking coconuts for dessert to accompany my left over stew.

Had to remove the hard shell, so they've sat in the freezer over night (so that it cracks!) Pried the shell off in peices. Coconut has a hard brown fiberous husk inside covering the meat...this I removed with a veggie peeler.

I am modifying my recipe for shredded coconut.

3 cups shredded coconut (going to try to get it anyway throwing peices of it into the blender)
1/2 cup flour
1/4 teaspoon salt
1 (300 ml) can sweetened condensed milk (think I still gots me a can)
1 1/2 teaspoons banana extract

Preheat oven to 325.
Combine coconut, flour and salt.
Stir in vanilla and milk.
Drop from a tablespoon onto a greased cookie sheet.

I'll let yall know how they taste and put up pictures and everything...
Bake for 13 minutes or until golden brown.

These were decent....didn't really taste the banana, and it was a bit bland not as sweet as store bought macaroons.

A small amount of vanilla, along with the banana flavoring, would have probably helped bring the flavors out. Add a spoonful or two of sugar next time, too. Or you could even roll the ones you still have left (if in fact you have any left!) in either regular or powedered sugar.

ETA: Oh, I see you have vanilla in the instructions but it isn't listed in the ingredients, so maybe you did have vanilla in them...

hmmm knew I forgot something.....converted another recipe from my computer but forgot to change over the instructions :sarcastic: it's too hot...I got some sugar, but either way it's decent stuff. I wish I had vanilla, and the banana went pretty well. Still a little bland.

It's pretty hard to mess up cookies, IMO....:-)

Hit them with an egg wash and they were pretty good with sprinkling of brown sugar....was very good.
