I have not tried this one yet. Plan to give it a whirl when I am home at Christmas.
This recipe was given to me buy one of my friends in the Danish Army. He said it was his wifes grandmothers. I am not sure if that is a good or bad thing.
Also as a caviat, when the first half is cooked, we will add chunky apple sause or boysenberry jam. Then apon completion, dust with powdered suger.


Ingredients:
6 egg whites
6 cups (1440mL)all-purpose flour
3 tablespoons(45mL)white sugar
1 1/2 teaspoon (15mL) salt
12 tablespoons (180mL)butter,melted
2 cups (1440mL)milk
1 cup vegetable oil,for frying
50 gram YEAST

Procedure:
1.Warm up the milk,handwarm.Put in the yeast,turn around until melted.
2.Mix together the flour,salt,melted butter and milk at one time and beat
until smooth
3. Let it rest about 30-40 min,until the yeast is working.
4.Beat the white stiff and gently pour in the egg whites.
5. Put about 1 tablespoon of vegetable oil in the bottom of each
ębleskive pan cup and heat until hot.Pour in about 2 tablespoons of the
batter into each cup.
6. As soon as they get bubbly around the edge,turn them quickly,and after
a while you turn them remaining 90.This will give them a perfect
ball-shape.Turn them with a long knitting needle or a fork.

YUM! I had these in Solvang, CA, which is a Danish village. That place had the best pastries I have ever had, too.

They remind me of pesche. An italian peach wedding cookie.


1 cup Sugar
4 whole Large Eggs
1 cup Vegetable Oil
4 cups Flour (you May Have To Keep Adding Flour Until Firm Enough To Form Balls)
1 Tablespoon Baking Powder
1 jar Peach Preserves, 12 Ounce Jar
6 ounces, fluid Peach Brandy
2 drops Red Food Coloring
1 cup Granulated Sugar

Heat oven to 350°F. Lightly grease cookie sheets.
Mix together sugar, eggs and oil. Add flour and baking powder. Form 1″ balls (cookies should be “flat” on the bottom where they rest on the cookie sheet) and bake about 10-15 minutes (until lightly browned on the bottom).
While still warm, take a small pointed knife and scoop out a pocket on the flat side of each cookie. Fill the hole with preserves and also spread a small amount on the flat sides as you join 2 cookies together to form the “peach”.
Color the brandy with a little food coloring and using a paint brush, dip the brush in the colored brandy and paint it on the peaches to give them a “blush”. Then roll the peach in granulated sugar.
You may garnish with artificial leaves for presentation. Otherwise use a clove and put in the seam to create a stem.

Delicious...I wanna get married just to have pesche =):lol: There is other variations though.

My husband makes Aebleskiver here. I had never heard of it before marrying into my husband's family.

My husband makes it with the cubed chunk of apple in the middle and then everyone dips the hot little cakes into an icing mixture of powdered sugar/milk or water. It is messy and overly sweet to me so I don't eat more than one or so a year.

I would probably like them better with powdered sugar myself. Plus it would be neater. :)

Aebleskiver pans are not usually readily available but can be ordered online.

Have fun making them! Around here if there is a blizzard the kids know it is Aebleskiver time (served with Little Smokies sausages).

Have fun making them! Around here if there is a blizzard the kids know it is Aebleskiver time (served with Little Smokies sausages).

You can find them on Flea bay but you have to look. A lot of times they will have them lables as something different. Obviously, the best ones are the cast iron. I had an Alum. one, but it just didnt give the correct texture like the old cast iron does. Best part of them is my son helps so they taste even better. ;)
