they are in their prime now. I had company from a lady from Tacome Wash. and she said there they call it pigweed. I can not vouch for that. Lambsquarters are a very good cooked green. I like it much better than spinach and have not planted a lot of spinach, except a little for some salad additions. Lambsquarters also freezes well, which can not be said for cooked stinging nettles. if your garden is being overrun by lambsquarters, count it a blessing. You can use it like spinach in any 'florentine' recipe, quiche etc.

I've used fresh medium leaves as a green on a sandwich. very mild.

This is one of my favorite vegetables! In past years when I was "gainfully employed" and didn't have time for a garden, I would pick weeds for my neighbor in exchange for vegetables. And I took the lambsquarter home and canned it! Over forty quarts, one year--enough to last my family for two years.

This is one of the first plants I teach when I give a wild edibles workshop. Yes, it is called pigweed, but there is also another pigweed that is also edible.

We like it.
My wife uses it with fish & rice. If ya'll would include a few other recipes I'd sure be grateful.
