Cattail shoots

I found an excellent article about eating cattail shoots - and now, before they bloom is the time to harvest them.

I also didn't know that you can get HIVES from stuffing a pillow with the seed heads - lots of articles talk about how soft and fluffy they are, but don't mention this little factor. This article discusses that problem at length.

I have Steve Brill's book and use it frequently. I love cattails. It is one of my favorite vegetables. All parts of this plant are edible at one time or another throughout the year. It's a great winter forage food.
