Im not an expert, but I prune during the dormant period.And just prune to keep the interior open and to eliminate any diseased or crossing branches

Pruning any fruit tree...you cut any dead branches off first. Remove all sprouts and suckers that grow straight up. Then open it up as was said, making sure to cut any branch that grows back toward the center of the tree. Then prune for balance, like each side looks sorta the same.
With apples, you can prune anytime the branches aren't frozen, better to not handle them then.
I live in apple country, and around here they prune in the early spring. They prune as was stated above and also top them to keep them from getting too tall...
