Ramps are abundant now and I would like to can some. I just need some information. An elderly lady told me she always just put a little water in the bottom of a big pot, filled it with ramps, let it cook for about 30 minutes then packed jars with the ramps and covered them with the cooking water and water bathed them for 30 minutes. I would think this would turn them to mush. I have always just lightly sauteed them in bacon fat then frozen them in bags. Just wondering if anyone has canned them before, how they did it and how they turned out.

If you have the space, freezing them might be better. Would think blanching the same length of time as spinach? :-/ I'm afraid canning would make them mushy, too, but better then none.

They would be a low-acid food and would have to be Pressure Canned, not done in a Boiling Water Canner, to be safe, and they would not survive I'm sure.
Yes, freeze.

I freeze some every year and started drying some of them them a few years ago. I chop them into pieces, dry 'em and seal in airtight bags or jars for later use.
