Is it possible/safe to can meat that was frozen while raw? I've found some awesome pork deals this past week (thank you Swine flu!!) and I'm filling my freezer. I'd like to can it but I don't have a pressure canner yet. I'm wondering if I can freeze it for now, then (after I get my canner) cook it and can it. Any suggestions?

Before freezing the bones should be removed and the meat cut into small pieces and then frozen preferrably in vacuum-sealed bags to prevent any freezer damage. *Meat would need to be completely thawed before processing. *There may be loss of some quality of the meat since freezing does cause cell damage.
If it were me I would do a 'hot pack' according to the Ball Blue Book.

I can meat that has been in the freezer all the time. Come hunting season with 4 boys I just dont have the time to can it all fresh. I do thaw it out in the fridge then pressure can it up.

Thanks - I guess I'll continue to stock up and look forward to getting my pressure canner SOON!
