Hi, is it possible to can turtle meat? All directions I've found are for freezing it. Has anyone here ever done it ? thanks

Turtle meat is too much of a delicacy for my pocket book and palate, but it could be pressure canned the same as 'fish' using the recipe in the Ball Blue Book of Preserving.

I have no idea what the texture of the meat would be, but perhaps that is why the recommended storage method is freezing.

Thank you CanNerd. They are to pricey for us to 18.$ a pound here, but we have acess to a private spring fed lake that has the turtles.Am going to try canning7 pint jars using the fish recipe when done will open & taste.If it is mushy then I'lljust have to freeze them. Nothing like turtle soup broth when your sick or when weather is hot.These taste very similar to lobster.

Did you ever can any turtle meat? How did it work out? I have a lot of snapping turtles I want to get out of my ponds, but I don't want them to go to waste. I thought I would can the meat if you had success at it.

Nothing like a treat of fresh deep fried snapping turtle...MMmmm, I have a friend who sells them, and brought some to a weekend camping trip, Wow, if they can be canned without ruining the consistency, I will have to start trapping them.

I have some neighbors that put 7 turtles in their freezer in one day. They don't can. They freeze everything, but I don't have that much freezer space... The only freezer space I have is above the refrigerator and is very very small. So, I try to can everything instead of freezing. The only thing I freeze is okra.

I knew Thyme had asked about canning turtle and was just hoping it turned out good. I may try to catch a turtle and go ahead and see how well it cans.

Canned turtle in a consumme broth for winter. Also lightly browned a bunch of turtle meat & canned it. Sons got back today from deer camp & said the canned turtle had a slightly different taste than when we freeze them. Flavour was almost like they had been roasted.They said they will take canned turtle with them again next year.

Was the meat still firm, and not mushy?
