Hello All!!!
My brother was just diagnosed with Diabeties and we are looking for safe canning recipes for him.
If you have a favorite recipe or know a good link,please help me out!
He was just learning to home can,and I don't want him to give it up.

Hi Leera - I know that the Ball Blue Book does have a section for this type of canning.

One does not give up eating food by becoming diabetic, nor would one give up canning food for the same reason.
For Jams & Jellies one would only have to use a no sugar required pectin so that either no sugar, less sugar, or Splenda is used.

I did give him a copy of the Ball Blue book a while back,when I gave him an extra water bath canner I had sitting around.
Thanks for the link,I'll check it out.
I know there are instructions and recipes out there,but I know that right now he feels tied to a restricted diet.I just want to help him see that he has more options than he thinks.
