I have ordered a water bath canning set. Is there a place to find out what you and a d cannot can in a water bath?

HI Cookie - I would suggest getting a Ball Blue Book - this will take you through all the things you can process in water bath (most jam/jelly/tomatoes/pickles) and those that require pressure canning (veggies, meat, soup). It is all based on the acidity of the food you are canning. This book is really helpful to start out with. Also - your set may come with a basic canning guide as well. Lots of experienced folks here - and we all love canning pretty much everything -

That is my goal. can as much as I can and dry some/
DH not into it too much. We have two freezers and they both need cleaning out, but I want to can and he wants to freeze, oh well I will can as much as I can/

Getting the Ball Blue Book of Preserving is a must. You can also get answers to any questions you have at the National Center for Home Food Preservation (http://www.uga.edu/nchfp/index.html). They also sell a great recipe book call "So Easy To Preserve" and even offer a free online self-study course on Food Preserving.

Ditto the Ball Blue book, the Fiesta Salsa and Spiced Pickled beets recipes are amazing.

I can't stop making the Spiced Pickled Beets and I'll sit and eat a whole jar when I open one....and then face the 'blood red' consequences for the next several days. ;D

Sorry, I don't trade my Pickled Beets for anything, not even Jalapeno Stuffed Okra (drool) ;D ;)

i have a 21 cubic foot and a 25 cubic foot upright freezer.. mostly just to get the harvest in,,, then can it later... i can get very overwhelmed with everything coming in at once

mostly for berries and pumpkins rhubarb stuff like that other wise can whats the easiest first... then go for the frozen stuff later.

Well got my canner, it came with a new blue ball book. so excited, cannot wait for the garden to come in and see what I can get from the farmers around here.

cookie: also be sure to read Jackie Clay's blog and recipes in the BWH blogs on the left hand side of the page. She is a wealth of into! Also, Carla Emery's books are great too....she was a wonderful person!

anyone use the red vinegar mixture left over from the beets to do their pickled eggs with? i heard it was pretty good

Whenever I happen to have both at the same time. Prick the eggs with a fork so the red penetrates deeply.

Some day I'm going to eat a big batch of my beets the day before I go to the doctor and have to give a sample. ;D
