From "Making & Using Dried Foods" by Phyllis Hobson
CABBAGE
Select solid, heavy cabbage heads with fresh, green color. Remove any tough outer leaves and cut heads into quarters. Core each quarter and shred by cutting into strips lengthwise. Blanch in steam for 2-3 minutes or in boiling water for 1-1/2 to 2 minutes. Chill in cold water. [Karen Note: New dehydrating recommendations would indicate use of a citric acid bath to lower bacteria growth risk. For the Cold Water Bath, add 1/2 t. citric acid to 1 quart water.]
Drain well. [Karen Note: I run mine through my lettuce spinner to dry it. Works like a charm ;).]
Spread shreds thinly over trays. Dry for 12-15 hours at 120°F, or until brittle. Every 3-4 hours stir with the hands and rotate trays.
To Use: Drop shreds into boiling soup and allow to cook as the soup simmers. To use as a vegetable, pour 1-cup boiling water over 1-cup shreds and simmer for 40 minutes, or until tender. One cup yields about 1-1/2 c. cooked vegetable.

have 10lb tht i dryed during the night.did blanche it but didnt citric bath it. will have to go to town & get citric acid before drying the next 10 lb today.this is already shredded cole slaw in a bag on clearance. thanks so much for the links.
