View Full Version : What do you do with Dill Stocks?

Hi all, We just did a small batch of Dills this years and are going to dry the heads but is there any use for the main stocks? It seems like a waste to me, I used to chew on them when I was a boy but never saw anyone use them after the heads were taken for pickles or whatever. What say you?

you could use the tough stem in soup stocks as you strain everything out anyway.

You can also use the stalks in dill vinegar. Just gently heat some good apple cider vinegar with lengths of the stalks, leaves and seed heads that will fit down into the pan. Use a glass, stainless steel or enamel pan, not aluminum or iron. Heat it, but don't boil & warm it until you can taste a change in the flavor. Do just enough to use for the next month in salad dressings and cooking. It keeps fine in the fridge - but fresh is best!

If you've ever used a home-made flavored vinegar in a dish that calls for regular vinegar, you'll never go back! This also makes a nice gift - packaged in a pretty bottle with a fresh dill sprig inside - for someone who is a good cook.

I use everything but the root!
Pull the seeds off and grind up the rest after it dries.
