Here's a web site that should be a great tool for you if you are new to canning. *All the recipes at this site are tested for food safety, pH, and spoilage or bacteria growth after storage.

National Center for Home Food Preservation -

Pickled Beets: *http://www.uga.edu/nchfp/how/can_06/pickled_beets.html

A copy of the Ball Blue Book (found in most stores with the canning equipment) will also have a great variety of recipes and these are tested recipes as well.

Pumpkin is a bit trickier. *Avoid any canning recipes where the pumpkin is mashed or pureed - they are unsafe to use for canning. *You can't be sure about heat penetration in the dense food.

Good luck canning... *:)

Thanks Karen for your tips...I worried about canning in the past as I certainly dont want to do it wrong, I did buy a pressure canner after reading that you should not hot water bath low acid foods like green beans and such.
