I would like to build a wooden watering trough. What type of wood should I use?

Wood without holes in it!
Seriously though, with the cost of wood these days a steel stock tank would probably outlast and be cheaper. It is for esthetics, I'll have to bow to them that know wooden troughs.
Black locust, White Oak, Cedar, Redwood (in order) are all naturally resistant to moisture, insect rot, and decay. If for use with animals, check with a vet about possible poison issues with certain woods.

Why not use a whiskey barrel cut in half lengthwise.
You get two trough from one barrel. Easy to make, lasts for years.
I have lots of them.

i gotta disagree with some a that,cottonwood is great for that kinda thing,locust is good,cyprus is probably the best..there are cottonwood culverts all over the west that been there 50 years an longer...just my humble opinion....the old wagon wheel hubs were made from sweet gum...last forever...huck
