Its been about 6 yrs since I canned anything and tomorrow I'm planning on canning jam, corn relish and pickles. If I can pickup some apples, I'll can some apple pie filling too. Any advice since its been so long. Or do you water can?

what type of canner are you using - pressure or boiling water?

boiling water.
My only advise would be to check either Ball Blue Book or Extension Service web site to make sure your recipes are safe for water bath canning. If its been several years, you might find the rules have changed.

Along with Anna's advise, check out information at the National Center for Home Food Preservation http://www.uga.edu/nchfp/publications/publications_usda.html. You'll find tested recipes there.
You need to take care to use tested recipes for apple pie filling. In the past the Co. Extension used to caution people not to can pie filling at home and potential safety problems. Now, however, Dr. Stan Wallin, Food Technologiest at the University of Nebraska, has developed safe recipes and procedures for making home canned apple and cherry pie fillings. He cautions that windfall apples should not be used in the recipe. The reason, windfall apples often carry bacteria picked up from the ground.
Make sure you choose a recipe for apple pie filling that has added lemon juice (use bottled lemon juice, not juice from fresh lemons to assure acidity level). You want to choose a recipe that has been tested for heat penetration and pH and has been subjected to tests after storage.

There is a similar recipe in the Ball Blue Book. Just make sure you are using a copy that is printed after 1995, because of changes in processing times. Many changes were based on altitude since that printing. Or the recipe at their web site:

I water bath can lots of things,but as was already said refer to the most recent information you can get.

I canned some desert jam, some spiced peaches using the Ball recipe, some mild corn relish and some garlic dill pickles.

We can some tomatoes in a water bath. Looking to do more.
Definitely get the Ball Blue Book. Wally World has them at a decent price on occasion.
