View Full Version : Canning Pork Tenderloin *????

I need to know how to can pork tenderloin. Do you precook it or pack it raw in the can. How long do you process the meat? Thanks !!!!

You can do it either way. All meat must be processed in a pressure canner at 10# for 90 minutes for pints. You need to check your local altitude to be sure 10# is right for your area. If you do the meat raw, you should put it into the jars and then set the jars into a pan of water and heat until the meat is hot all the way through before putting on lids and processing. Pork tenderloin is on sale this week for 99¢ a pound so I intend to buy at least 2 to can. Makes the most delicious pulled pork!!

I don't eat pork, but i did can a boneless turkey breast roast. I cooked it first and then cut it up to fit into pint jars and topped it off with hot broth. I have had no problems with it. I would assume that a pork tenderloin would can up the same way. Good luck.

Tenderloin is on sale here this week too. I too was thinking about canning up some myself. I was thinking about canning mine as pork BBQ.

I had a turkey breast roast in the freezer and decided to turn it into pulled turkey. I cooked it in the crock pot for the first 10 hours, then shredded it and poured barbeque sauce over it and cooked it for another two hours. Unfortunately, we ate the whole thing. The next time the turkey breast roast is on sale i am buying several and am going to can them as pulled turkey.

Well I got all the tenderloin and sausage canned yesterday. I had 46 quarts and the cans of meat looks wonderful and I am sure it will taste the same. LOL I am afraid that food prices in the stores are going to sky-rocket so I am going to grow and can everything that I can yhis summer. Anyone else feel this way too? Also was wondering if you folks had a good barbecue sauce recipe. I am suppose to make the barbecue sauce for a young ladys graduation from college next month. Her dad is having a pig roast to celebrate her graduation. Thanks again for all the help on canning the pork. :)

I have a bbq sauce using ketchup and I have a bbq sauce using tomatoes. Which would you prefer?

I am also concerned about food prices. As soon as passover is finished, I am getting myself to Sam's to buy a big bag of flour (I hope they have unbleached). If not , then off to Kroger I go. I am stocking up on food when they have specials at the store. Just this week there was a special at Kroger on canned vegetables-50 cents a can. I know it's better to can your own, but I did buy many cans just to have in case of an emergency. Bob says that it looks like we are preparing for a biblical famine!

I'm no pro but learning (pressure canning) from my Mom and an Aunt who have been at it for years. They both learned the craft from my great-grandmother.
As far as Pork goes, they both prefer to pre-cook it (any type of cut) to get rid of as much fat as possible before canning. It seems that Pork, even drained, will also not store as long as other meats and should be consumed within 1 year.

This makes a gallon because I water bath can it in pint jars.

12 cups of ketchup
8 cups of cider or red wine vinegar
2 cups of worcestshire sauce
2 cups of soy sauce
8 cups light brown sugar
2/3 cup dry mustard
1 cup of chili powder
3 tbsp. ground ginger
16 cloves of garlic minced, basically one head of garlic

I mix all together in my crock pot and cook on low for about 4-6 hours. Then I just water bath can it for 15 minutes. Good luck.

I have used dehydrated garlic in this when I didn't have fresh and it turned out the same.
