I have some home made apple juice gone off in the fridge. I was wondering if I could turn it into vinegar. If no one answers soon, you may have to do a google search.

I've read before that all you have to do is let red wine go in the fridge for a long time (after opening). Supposedly it will turn into red wine vinegar. As far as the regular vinegar goes, I'm not sure.

I make apple cider, red and white wine vinegar.
Using the oleans method.
What type of vinegar are you intereeted in making?

For starters, is there a book or a website that you could recommend?
I am interested in apple cider vinegar mostly. *i don't know if I can get enough apples for it. *maybe if I pick off my neighbours tree, they don't use them anyway.
But it would be good to know how to make the other two, it's just that I rarely use wine vinegars..... Now wine is a different story!
BTW: thanks to your little saying under your name I now have the song "Acrobat" by U2 running through my head... off to hunt down the CD.

I have previously posted my recipe for "rattlesnake vinegar" on the frugal forum. Making any other kind of vinegar is pretty much the same. Here's a link:

I used Bragg Apple Cider vinegar as a starter.
It's available at many health food stores.

Wine vinegar starter is available at home brew shops.
If you're going to use the vinegar for preserving, it's important to titrate it (test the acid level).
That process is also described in the article.

I have made pickles with my rattlesnake vinegar, mostly cucumber pickles and of course watermelon pickles ;). Martin is right you do need to titrate the ph level before you use it for pickling. It is not hard to do. I didn't check out his link above but I have titrated using a red cabbage solution (it's been a long time since I did that so I don't remember exactly I would have to look it up) I usually use rattlesnake vinegar for salad dressings, wilted cucumbers, and making mayonnaise. It is also good for cleaning and using as a softening rinse for your laundry.
