View Full Version : Cucumber receipes needed, please

I really could use some suggestions. Normally, I work w/pickling cucumbers. But, my neighbor gave us a bunch of long slicing cucumbers. Don't know what kind, cause she doesn't speak English so well. Long w/ little white bump growths that wipe off. Does anyone have relish recipe suggestions that can be canned (either pressure or water bath). Not picky, just want to preserve the harvest with a sandwich spread or relish.

I like to food-process the larger cucumbers; and use my regular pickle recipe to make relish... sometimes with a little more pepper or maybe some extra onion or garlic if I have spare. Just a thought. Great on hot dogs.

frig pickles just got all the stuff from my parentes house to day you take home grown if you have them onion's if not then what ever onion you have. you slice up the cucumbers up then put in a container of salt water let them sock 3 hours or so then drain the slat water put them in your jar then for every cup of vinegar you had add a cup of sugar toss the onions in close the container and put in frig after a few days they will be ready to eat I know this isnt canning but might be a use for them

Thanks for your input. I figured I can't let free stuff just go bad. So, found a bread/butter receipe. Didn't know how they'd turn out, but dh was willing to try. (he hovered around them for weeks). :-)

Turned out great. Dh ate a pint in 1 day.
