View Full Version : Canning frozen potatos?

Hello all.

Some times the Kroger store here at home will have their frozen potatoes for a ridiculous price (cheap). Some of the "O'brein" potatoes are bagged in 3-5# bags. I had thought about buying a few bags to can. Yeah I know they are already frozen and really easy to prepare. If they're canned then I don't have to worry about the freezer dying or anything else.

Has anyone else done this before? What do you think?

I don't eat potatoes (nightshade, irish potatoes) But when I used to eat them there was something in the texture of canned fresh potatoes that I didn't like. I suppose you could can the frozen ones. (You would have to cook them and put them in hot and pressure can) but I think the texture would be even worse. I think a better alternative would be to dehydrate them. Dip them into some lemon juice (so they don't turn gray) then dehydrate them according to the directions on your food dehydrator or in your oven in a single layer at the lowest setting with the door propped open, until they are crispy dry.

Did you know that you can use vitamin C instead of lemon juice. The vitamin C doesn't impart a bitter taste to what ever you're using it on. Just grind up about 10 tablets per gallon of water and viola!
