I had 5 lbs of deer burger almost a year old in the freezer. I mixed it half and half with some regular ground beef ($1.39 a lb on sale) Browned it and added some diced up onions, peppers and celery. Pints, 75 minutes at 10 lb pressure. I don't like deer burger even in chili but when it's mixed half and half like that you can't even detect it. The overly lean deer meat mixed with the overly fat hamburger comes out just right, and very convenient to add to chili or spaghetti or to make tacos out of. It's surprising the deer meat lasted a year in the freezer except it's so lean, that might be why it kept good. If anybody still has any in the freezer from last year, it's a good way to use it up.

Sounds really good, maybe you should can it fresh that way you don't waste a years energy freezing it, or risk a power outage that could ruin it and leave you more freezer space.

You're quite right, that would be a lot smarter to can it fresh. I'd still mix it with the ground beef, though, it really takes away the gamey taste.

That's a really good idea. I have quite a bit of deer burger that I put in the freezer last week. I'm not a huge deer burger fan (love other cuts though) and I may be able to use the last of my beef burger from last year to mix with it. I hope the beef is still good. I hadn't thought of all the ways to use it. Thank you!
